Saint Valentin
Family Recipe Serves 4 to 5

Ingredients
250 g almond powder
50 g cocoa powder
225 g powdered sugar
6 fresh egg whites
1 tablespoon of honey
500 g UHT cream
50 g gelatine
100 g white chocolate
150 g candied cherries
Pink and light green almond paste
Candied cherries for decoration

Preparation
- Soak 100 g of candied cherries in kirsh.
- Preheat the oven (thermostat 6 at 180°C).
- First, mix the almond powder, cocoa powder and 225 g of caster sugar in a bowl.
- In a bowl, beat the egg whites and the remaining 75 g of powdered sugar. Add the honey.
- Pour the contents of the bowl into the salad bowl and mix everything together.
- Spread the preparation on 2 baking sheets 60×40.
- Bake for 15 minutes.
- In a saucepan heat 100 g of UHT cream, add the white chocolate and gelatin.
- Allow to cool, then add the 200 g of cream previously whipped up.
- Cut out the cookie sheets in the shape of a heart using a cardboard support.
- On the first cookie, pour the white cream, incorporating the macerated cherries cut into small pieces.
- Cover with the second cookie and smooth with a spatula the cream on the edge of the cake.
- Arrange the halved candied cherries at regular intervals on the edge in the white cream.
- Cover the top with the pink marzipan.
- Decorate with 3 candied cherries and green marzipan cut into leaves.
